Cherry & Cardamom Semifreddo - A Central Otago Dessert


Nothing says Central Otago like our cherries. They are exported all over the world.


This recipe would work with any of your favourite fruits, just have a play.


Cherry & Cardamom Semifreddo - A Central Otago Dessert


Cherry & Cardamom Semifreddo


Serves 4-6


Ingredients


  • 500grams cherries-stoned

  • 385grams caster sugar

  • 4 eggs-separated

  • 60ml port

  • 1/2tsp ground cardamom

  • 100grams white chocolate

  • 100grams mascarpone



Method


  1. Place cherries and 300grams sugar into a medium pot over a medium heat. Bring is to a simmer, continue for 5mins.

  2. Remove from heat and leave to cool.

  3. Place yolk, port, cardamom and remaining sugar into a stainless steel bowl and place over a pot of simmering water.

  4. Whisk vigorously for 2-3mins or till double, pale and thick.

  5. Fold in white chocolate very gently, leave it to melt on its own but don't worry if it doesn't melt completely.

  6. Put mascarpone into a bowl and then fold thru the egg/choco mix with 1/4C cherry juice. Set aside.

  7. Beat egg whites till nearly soft peaks then fold thru mascarpone mix.

  8. Line a loaf tin. Place 10-12 whole poached cherries on the bottom the tin then spread over semifreddo mix. Top with some more cherries and reserve the remaining for serving.

  9. Freeze overnight then turn out and cut to serve.
