How to Make Easy Homemade Marshmallows For Matariki S'Mores


Marshmallows are fun to make and so easy too.


What better night to give them a try than when all the family are gathered celebrating Matariki.


I’m fairly sure most of us will have a fire roaring, especially with how chilly winter has been.


With a little supervision, the kids can give this a go. And if you’d prefer to leave the food colouring out, that won’t affect the finished product.


So...How to Make Easy Homemade Marshmallows For Matariki S'Mores


Matariki Marshmallows-makes 15 pieces


Ingredients


  • 2Tbsp powdered gelatine

  • 550grms caster sugar

  • 190ml water

  • 1Tbsp golden syrup


Method


Prepare your tray, generally I use a high sided 24cm long slice tin but if you have a Swiss roll tin that works to but you will have quite thin marshmallow.

To prep tray grease with a vegetable oil(keep it flavourless,don’t want your marshmallow tasting of olive oil) then line with plastic wrap.


In a small bowl add 1/4C cold water and sprinkle over gelatine,leave to bloom(this is where the gelatine soften)





Place a medium pot onto element,add in the sugar, golden syrup and water and bring to the boil, reduce heat to a brisk simmer. Cook like this for 9mins or till the large bubbles begin to turn to small tight bubbles(this means the water has evaporated enough)


Turn off heat and stand for 5mins to cool slightly.


Pour into a stand mixer, add in the bloomed gelatine and being very careful turn on and beat till completely cold and nice and fluffy. This is where you can add in food colouring if you want.


Pour into tin and spread with a greased spatula. Leave covered to set in a cool place but not the refrigerator for 8hrs.


To cut these either with a sharp knife or a cookie cutter make sure to grease the knife or cutter with vegetable oil so the marshmallow slides off nicely. Lay cut marshmallow on a tray dusted lightly with icing sugar so not to stick to the tray. They will keep in a airtight container for 5 days


You can toast these on a open fire then sandwich them between a favourite chocolate biscuit or they are really nice just by themselves too.
